The mob was supposed to adopt the characteristics of the absorbed item, and the loss of emissive glow from the textures was clearly not part of the creators' plans.
How the New System Works in Snapshot 3
In Minecraft 26.2 Snapshot 3, the Mojang team fixed this issue. Now, when the Sulfur Cube absorbs a block with the ability to glow, the visual glowing effect is preserved. The mob looks bright and striking, standing out in the darkness of sulfur caves.
But here’s an important detail: although the block inside the cube glows again, it does not create a light source for the surrounding area. This means the light level around the mob remains the same. The cube acts like a beautiful neon sign that pleases the eye but doesn’t help illuminate a dark tunnel or protect an area from hostile mob spawns.

Should We Expect Portable Light Sources?
This half-solution — visual glow without actual lighting — raises many questions about the future of this mechanic. Many fans hope that in future updates, the developers will go further and give Sulfur Cubes the ability to fully emit light.
Just imagine the possibilities this would open up. You could have a living, moving light source. It would be possible to light your path by guiding the Sulfur Cube behind you, without spending time constantly placing and collecting torches. This would be a true revolution in cave exploration and the construction of dynamic decorations.
